What is a SCOBY?

It's alive! The SCOBY acronym is short for Symbiotic Colony of Bacteria and Yeast.

What does the SCOBY do?

Very simply... The SCOBY converts sugars from your sweet tea into carbon dioxide and acid.

A natural reaction takes place in the vessel over time when the SCOBY is added. The bacteria and yeast in the SCOBY breaks down sugars and turns them into carbon dioxide, alcohols, and acid.

The resulting masterpiece of the SCOBY's work is a low sugar, probiotic rich carbonated drink with a slight kick.

What equipment do I need?

The Basics - a jar and some bottles

Like a Pro - a brewing vessel, bottles, a tea kettle, PH meter, and a funnel

What food items do I need?

All you need is water, tea, sugar and a SCOBY!

Should I use vinegar to clean equipment?

Yes, use hot water and vinegar to clean your kombucha brewing equipment.

Do not use anti-bacterial soap!

What is the recommended temperature range?

It is acceptable to brew kombucha from 65-85°F (18-29°C). The ideal range is 78-80°F (26-27°C)
